Chicken-Broccoli Salad with Buttermilk Dressing

  • 3 cups broccoli coleslaw mix
    2 cups coarsely chopped cooked chicken breast
    ½ cup dried cherries
    ⅓ cup thinly sliced celery
    ¼ cup finely chopped red onion
    ⅓ cup buttermilk
    ⅓ cup light mayonnaise
    1 tablespoon honey
    1 tablespoon cider vinegar
    1 teaspoon dry mustard
    ½ teaspoon salt
    ⅛ teaspoon black pepper
    4 cups fresh baby spinach


  • In a large bowl combine the broccoli slaw mix, chicken, dried cherries, celery, and red onion. In a small bowl whisk together buttermilk, mayonnaise, honey, vinegar, dry mustard, salt and pepper. Pour buttermilk mixture over broccoli mixture; toss gently to combine. Cover and chill at least 2 hours or up to 24 hours before serving.
    Just before serving, add baby spinach and toss gently to combine.
