4 (8 inch) whole-wheat flour tortillas 2 cups shredded lettuce
2 cups shredded pressure-cooked beef roast (see associated recipe) 1 cup chopped green and red bell peppers ½ cup shredded reduced-fat Cheddar cheese ½ cup salsa (optional) ¼ cup light sour cream (optional)
Place a tortilla on each of 4 serving plates. Divide lettuce among tortillas. Top with beef, peppers and cheese. Garnish with salsa and sour cream, if desired.
